Because the vegetables are travelling on a conveyor belt it sounds like a non-contact infrared sensor may be the best solution. You mentioned that the conveyor belt is 80mm wide which means the spot size of the infrared sensor must be smaller than 80mm(we actually suggest the spot size be less than 1/2 the target size or 40mm in this case). Our PyroMini with 30:1 spot size may work for your application. You can see the field of view diagram below produces a spot size of less than 30mm when the sensor is positioned 20 inches from the surface. There are other considerations such as temperature range when selecting a sensor.
