We don't specify the low temperature range of the probe because it is application sensitive. The probe consists of T type thermocouple wire with a 304 stainless steel sheath and a ceramic insulator. The upper temperature limit is much more definable since the T thermocouple has a ~400°C upper limit. T thermocouples can measure down to -270°C but the 304 stainless steel has a lower limit of around -200°C so although the probe can technically read down to -200°C, if the steel is cooled to very low temperatures it will become brittle and could fracture depending on the application.
