The two most common types of connectors are standard-sized and miniature-sized connectors. Standard-sized connectors have round pins, while miniature-sized connectors have flat pins. Generally, connectors are interchangeable as long as you maintain size consistency. That is, standard-sized plugs (male) are interchangeable with standard-sized sockets (female), and miniature-sized plugs (male) are interchangeable with miniature-sized sockets (female), provided you keep the thermocouple calibration (e.g., J, K, T, E, etc.) consistent.
