All thermocouples are analog. A thermocouple consists of two wires of different materials joined at one end. A small voltage is produced when there is a temperature difference between the joined end and the other end. The voltage is non-linear and requires a process called cold junction compensation. There are many devices on the market that can be used to convert the analog output of a thermocouple to a digital format. For example, the IOthrifty DigiRail-2A ,will accept two thermocouple inputs and transmit the values as RS485 using Modbus protocol.
